2 beef shanks
2 tablespoons vegetable oil
1 onion, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon dried thyme
2 cups beef broth
1 bay leaf


1. Preheat oven to 350 degrees F (175 degrees C).
2. Heat the oil in a large skillet over medium heat. Add the beef shanks and brown on all sides. Remove from the skillet and transfer to a roasting pan.
3. Add the onion, garlic, oregano, cumin, and thyme to the skillet and sauté until the onion is softened and fragrant, about 5 minutes.
4. Add the beef broth to the skillet and bring to a boil. Pour the broth mixture over the beef shanks and add the bay leaf.
5. Cover the roasting pan with a lid or aluminum foil and place in the preheated oven.
6. Bake in the preheated oven for 1 1/2 hours, or until the beef shanks are tender and cooked through.
7. Remove from the oven and discard the bay leaf. Serve warm.
