1/2 lb. beef chorizo
1 onion, diced
3 cloves garlic, minced
1 teaspoon paprika
1/4 teaspoon cumin
1/4 teaspoon oregano
1/4 teaspoon chili powder
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
1/2 cup chicken broth
1/4 cup white wine
1 can diced tomatoes with green chilies
1/2 cup chopped cilantro


1. Heat a large skillet over medium-high heat.
2. Add the beef chorizo and cook, stirring occasionally, until browned and cooked through, about 5 minutes.
3. Add the onion, garlic, paprika, cumin, oregano, chili powder, black pepper, and red pepper flakes. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
4. Add the chicken broth and white wine. Simmer until the liquid is reduced by half.
5. Add the diced tomatoes with green chilies and simmer for 5 minutes.
6. Stir in the chopped cilantro.
7. Serve hot.
