– 4 beef cheeks
– 2 tablespoons olive oil
– 1 onion, diced
– 2 carrots, diced
– 2 celery stalks, diced
– 2 cloves garlic, minced
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– 2 cups beef stock
– 2 tablespoons tomato paste
– 2 tablespoons red wine vinegar
– Salt and pepper to taste


1. Preheat oven to 350°F (175°C).

2. Heat the olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Add the beef cheeks and cook for about 5 minutes, or until browned on all sides.

3. Remove the beef cheeks from the pot and set aside.

4. Add the onion, carrots, celery and garlic to the pot and cook for about 5 minutes, or until the vegetables are softened.

5. Add the thyme, rosemary, beef stock, tomato paste and red wine vinegar to the pot and stir to combine.

6. Return the beef cheeks to the pot, season with salt and pepper to taste, and bring to a simmer.

7. Cover the pot and transfer to the preheated oven. Cook for 2-3 hours, or until the beef cheeks are tender.

8. Serve the beef cheeks with the sauce and vegetables. Enjoy!
