Ingredients

1 beef shank
Salt and pepper to taste
2 tablespoons olive oil
2 cloves garlic, minced
1 onion, diced
1 teaspoon dried thyme
1 bay leaf
3 cups beef stock or broth
2 tablespoons tomato paste
2 tablespoons all-purpose flour

Instructions

1. Preheat oven to 350 degrees F (175 degrees C).

2. Generously season the beef shank with salt and pepper. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Add the beef shank and brown on each side, about 4 minutes per side.

3. Remove the beef shank from the pot and set aside. Add garlic, onion, thyme, and bay leaf to the pot and cook until the onion is softened, about 5 minutes.

4. Return the beef shank to the pot and pour in the beef stock. Bring the mixture to a boil, then reduce heat to low. Cover the pot and simmer for 1 hour.

5. Remove the beef shank from the pot and set aside. Mix together tomato paste and flour in a small bowl and stir into the pot. Increase the heat to medium-high and bring the mixture to a boil, stirring often.

6. Return the beef shank to the pot and cover. Place in the preheated oven and bake for 1 1/2 hours, until the beef shank is tender.

7. Serve the beef shank with the sauce from the pot. Enjoy!
